Le Cheval Blanc was granted a license to make artisan beer on April 15, 1987. This was the first permit of its sort issued in the contemporary history of Quebec. For Jérôme and his loyal right-hand man, Marc Leduc, it’s the start of a new age. Brewing and servicing equipment has been updated, the number of fermentation tanks has been expanded, and 10 cask lines are now available. The bar’s seating capacity has expanded from 88 to 135 persons. The renovations have been done in such a way that the original 1950s décor has been preserved.
